Since the age of 15 Paolo has been working in the culinary industry. A lost child he found both a true calling and for the first time a sense of family.
It is with all the passion of 38 years of working and owning restaurants, being in the kitchen, creating menus and navigating new and popular food trends and allergies that Paolo lives and breathes.
From being General Manager/Executive chef of Da Umberto in Chelsea NYC to owning his own restaurant, incognito bistro in Flatiron NYC.
From restaurant consulting, to going into private homes creating dishes for busy New York families. His client list includes: Harrison Ford, the late great Paul Newman, Julia Roberts and the British Ambassador his family and guests, one of whom was a senior member of the British Royal Family.
